Can you still zip up your jeans? Maybe not so much after this…
Cookies for you and your hips. Pound 3: Goody Gumdrops
[from Good Housekeeping's Christmas Cook Book circa '58]
1 cup sifted all-purpose flour
1/2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 cup shortening
1/2 cup brown sugar, packed [like a bag to Hawaii]
1/2 cup granulated sugar
1 T water
1 t vanilla extract
1 1/2 cups uncooked rolled oats
3/4 cup gumdrops, cut into small pieces
1 1/4 cups flaked coconut [optional, but festive!]
Preheat oven to 300 degrees. Sift together, into bowl, flour, baking powder, soda, salt. Add shortening, sugars, egg, water, vanilla; beat until smooth. Fold in rolled oats and gumdrop pieces.
Shape mixture into walnut-size balls; if desired, roll in coconut. Place on ungreased cookie sheet. Bake 12 to 15 minutes. Makes 4 dozen.
Enjoy this granny-inspired goody. And get out your comfy pants.
